Apple Pancakes Recipe

Shredded apple gives these light fluffy pancakes some incredible flavour!


2 large eggs
1-1/2 cups (375 mL) milk
2 cups (500mL) all-purpose flour
1 tsp (5 mL) baking powder
1/4 cup (50 mL) sugar
2 medium apples, peeled and coarsely grated
1 tsp (5 mL) vanilla
Butter for frying (or vegetable oil)
Confectioner’s sugar for topping


Whisk together the eggs, milk and vanilla in a bowl.
In a smaller bowl, whisk together the flour, baking powder, salt and sugar.
Stir the dry ingredients into the wet, then blend in the grated apples.
Heat a thumb sized piece of butter in a skillet over medium heat. Drop 1/3 cup of batter into the pan and flatten it out a little. Cook until golden brown underneath, then flip and cook for an additional two to three minutes.
Top with powdered sugar and serve immediately. Alternatively keep on a rack in a 200ºF (100ºC) oven until you have enough ready to serve.
