आजकल शहद निर्माण में लगी कंपनियां शक्कर, गुड़ और शीरे आदि का उपयोग कर शहद बना रही हैं और एगमार्क का लेवल लगाकर शुद्ध शहद के रूप में प्रचलित कर बेच रही हैं। इसीलिए इसमें कोई दो राय नहीं है कि शहद के मामले में धोखाधड़ी और ठग विद्या बहुत है, यहां पच्चीस-तीस रुपये किलो की चीनी या 15-20 रुपये किलो के गुड़ द्वारा बनाया गया शहद 150 से 250 रुपये किलो में बेचा जाता है।
इस नकली शहद की पहचान करने की कुछ ऐसी आम विधियां हैं, जिनके द्वारा असली व नकली शहद में अंतर स्पष्ट पता कर सकते हैं। कहा जाता है कि असली शहद भारी होता है और पानी में डालने पर नीचे तली में बैठ जाता है और घुलता नहीं है जबकि नकली शहद तुरन्त घुल जाता है। इसी प्रकार असली शहद पर मक्खियां बैठकर तुरन्त उड़ जाती हैं क्योंकि शहद के तत्व मक्खी के पंखों पर चिपकते नहीं हैं। एक अन्य घरेलू विधि में शुद्ध शहद को रुई की बत्ती पर जलाकर देखा जाता है और वह सरसों के तेल जैसी खुशबू छोड़ते हुए जलता है, जबकि नकली शहद की बत्ती जलाते समय वह श क्कर या गुड़ की गंध छोड़ता है।


शहद इकठ्ठा करने के लिए मधुमक्खियों को बहुत ही परिश्रम करना पड़ता है। वैज्ञानिकों का कहना है कि मधुमक्खियां अपने छत्ते के सभी खानों को महीनों में भर पाती हैं, लेकिन मनुष्य है कि देखते-देखते उनके परिश्रम को नष्ट करके अपना भला कर लेता है। सचमुच इस क्षेत्र में मनुष्य बड़ा ही स्वार्थी व लोभी है।
शुद्ध शहद को हमारे बुजुर्ग लोग सलाई की सहायता से आंखों में भी लगाते थे क्योंकि यह आंखों में चिपकता नहीं है और आंखों से गंदगी निकालकर इनकी रोषनी बढ़ाता है। वास्तव में देखा जाए तो दीर्घायु होने के लिए शहद का प्रतिदिन उपयोग निहायत ही आवश्यक है।
